turkish leek soup - pırasa yemeği

My mom is usually cooking this leek soup for my dad whenever she's thinking "What should i cook today?" because this recipe is so easy to make and it's ready to serve in just half an hour.

Ingredients

3 tablespoons vegetable oil
1 tablespoon tomato paste
1 tablespoon pepper paste
2-3 leeks
4-5 glasses of water (one glass of water makes 210-230 ml)
4-5 tablespoons of rice
salt

Chop the leeks & wash them. Cook the vegetable oil with the tomato paste & the pepper paste until the two ingredients becomes one. You can find pepper paste at any turkish markets. You can use 2 tablespoons tomato paste instead if you can't find it. 


Add your chopped leeks & cook for about 3-4 minutes. Then add your water, give it a good stir & let it cook. If you're seeing bubbles forming then add your rice & salt. Cook for about 20-30 minutes or until your leeks ar soft. Make sure to stir it till your leek soup is ready to serve.
