1 cup of butter, at room temperature
1 cup of sugar
1 egg
1/2 teaspoon of salt
1/2 teaspoon of baking powder
1 teaspoon of baking soda
flour as much as needed
poppy seed mixture from the store or poppy seeds with sugar & milk
Cream together the butter & the sugar. Add the egg & mix until combined. Finally add the baking powder, the baking soda & the flour to the mixture & mix it all together until a dough forms. The dough should be a little crumbly like you can see on the picture.
Press 2/3 of the dough into a lasagne-form or you can use any other baking form that would be perfect for these poppy seed crumb cake bars. Make sure to line in with parchment paper first. I used a poppy seed mixture from the store & just added milk to it but you can make your own poppy seed mixture by using poppy seeds, sugar & milk as well. Then smear the mixture over the pressed dough.
Crumble the remaining dough on top of it & bake at 375 degrees F (about 190-200 °C) for about 30 minutes or until golden brown. Let it cool completely before you cut it.
You can modify the recipe & just use jam or cooked fruits instead of the poppy seed mixture. I like this recipe with orange zest in the dough & cherry jam as well. Just use whatever you desire.
