Lahmacun - 'Turkish pizza'

Todays recipe is one of the most known turkish food of all time. It's "lahmacun" or like some others say the "turkish pizza".



Ingredients

(the measurement of the glass i used was betwenn 200 - 250 mil.)

for the dough

1 package of fresh yeast
2 Tbsp of vegetable oil
1 glass of milk
1 glass of hot water
1 tsp of salt
1/2 tsp of sugar
1000 grams of flour 

for the ground beef mixture

750 grams of ground beef
250 grams of diced tomatoes (out of the can)
1 Tbsp of pepper paste (you can leave it out if you can't find it)
2 Tbsp of vegetable oil
2-3 Tbsp of water
1 egg
1/2 tsp of salt
1 pinch of pepper
1 pinch of ground cumin
chopped parsley
1 chopped green pepper

Knead all the ingredients for the dough together. I might do a seperate post about the dough mixture because we're using this recipe all the time. Let it rest for at least 1 hour. But make sure you let it rise in a warm place so that the yeast in it could be activated. After that just form tangerine sized doughs out of the big dough. Don't forget to cover them so they won't dry out.


While they are rising a little bit more we're now preparing the ground beef mixture. Put the diced tomatoes into a mixing bowl. Add the ground beef, the egg, the tomato paste & the vegetable oil. Chop the greens & add them together with the spices to the mixture. Just mix everything together.


Flour your work surface. Take one of the doughs & roll it out. Put about a tablespoon of the ground beef mixture on it & spread out evenly. You can use the back of your spoon for that.


Now for cooking these bad boys we used a silex multigrill just because it's faster. But you can also use the oven for that. Just bake for a few minutes.


The only thing to do now is to squeeze a bit of lemon juice on it & wrap it together with some salad & onions. You can always roll them out thinner if you prefer a crispier lahmacun. Enjoy them with ayran.
